Ingredients:
4 x 175g/6oz Tuna or Swordfish Steaks
Olive Oil
For the Chermoula:
25g/1oz freshly chopped Coriander
2 teasp toasted Cumin Seeds
½ teasp Cayenne Pepper
2 teasp Sweet Paprika
4 Garlic Cloves
The juice of 1 Lemon
2 tbsp Olive Oil
½ tbsp Sea Salt
Instructions:
1. Place all the ingredients for the chermoula into a food
processor and process until well blended but still relatively chunky.
2. Rub the chermoula over the tuna steaks on both sides, place
in a shallow dish, cover and marinate for at least 2 hours, turning from time
to time.
3. Place a little olive oil in a large frying pan and heat until
very hot. Add the tuna and cook for about 3-4 minutes on each side.
Serve immediately.
